Oatmeal Chocolate Chip Muffins

You can make these muffins with raisins instead of chocolate chips if you prefer.

Oatmeal Chocolate Chip Muffins

1 cup oatmeal
1 cup boiling water

In a small bowl, mix and let stand for 20 minutes.

1 1/2 cups brown sugar
1/2 cup butter or margarine
2 eggs well beaten
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1 cup all purpose flour
1 cup chocolate chips or raisins

In a mixing bowl, cream the sugar and butter. Add the eggs and beat together. In another bowl stir together all the dry ingredients. Add the chocolate chips or raisins to the dry ingredients and mix. Add the dry ingredients to the butter mixture and stir well. Add the vanilla. Gently stir in the oatmeal.

Bake in a muffin tin at 375F for 20-25 minutes.
