Coconut Topped Chocolate Muffins

These are slightly messy muffins to eat, but tasty.
Muffin:

2 cups all purpose flour
3/4 cup sugar
1/4 cup cocoa
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
1 cup milk
1/3 cup cooking oil

In a medium sized bowl, stir together flour, sugar, cocoa, baking powder, salt and cinnamon. Make a well in the centre.

In a small bowl beat eggs slightly. Stir in milk and oil. Pour this mixture into the well and stir into the dry ingredients to moisten. Fill greased muffin cups 3/4 full.

Topping:

1/4 cup skim milk
1 teaspoon butter
1/4 teaspoon almond flavouring
1 cup coconut flakes

In a small bowl mix milk, butter and almond flavouring vigorously to blend. Stir in coconut and mix well.
Using a teaspoon try to place topping at the centre of each muffin the best you can and press the coconut mixture down into the batter to help secure it.

Bake at 400F for 20-25 minutes.
